Egg and Caviar Dip
2 to 3 hard-cooked eggs, chopped
2 tbsp. chopped onion, red or yellow
¼ cup mayonnaise
2 tbsp. black or red caviar, or 1 tbsp. of each color
In medium-size mixing bowl, combine eggs, onion, and mayonnaise. Mix until smooth with a fork or spoon. Spread the mixture in a shallow serving bowl or dish. Carefully cover the surface with a single layer of caviar. Designs may be made with the caviar. Or cover only half of the surface for those who do not care for caviar. Serve with crackers. Makes 4 servings.
