Heart Healthy Zucchini Muffins

Zucchini Muffins


2 cups whole wheat flour
1 tbsp. baking powder
1/2 tsp. salt
1 tsp. ground cinnamon
3/4 cup non-fat milk
2 egg whites, slightly beaten
1/2 cup vegetable oil
1/4 cup honey
1 cup zucchini, grated


Preheat oven to 375 degrees. Grease muffin tins lightly with oil or nonstick cooking spray. Combine whole wheat flour, baking powder, salt, and cinnamon and mix thoroughly. Mix the milk, egg whites, oil, honey, and zucchini together. Pour into the dry ingredients and stir until just barely moistened. Batter should be lumpy. Fill muffin tins 2/3 full with batter. Bake at 375 degrees for 20 minutes or until lightly browned.
