Cheese Soup

A delicious cheese soup to warm you up on a cold day!

The following recipe was included in the
1994 Royal Neighbors of America Cookbook.

 

Ingredients
5 medium potatoes, cut in small cubes
1 carrot, diced
1 celery stalk, diced
¼ cup onion, diced
Salt & pepper to taste
¼ tsp. thyme
2 cups ham, cut in chunks OR ½ lb. crisp bacon, crumbled
Water
3-4 cups milk
1 can cheese soup (cheddar or nacho for spice)
1 cup shredded cheese (Cheddar or American)
2 Tbsp. flour mixed with ½ cup milk for thickeningInstructions
In Dutch oven, combine potatoes, carrot, celery, onion, salt, pepper, thyme, and ham. Just barely cover ingredients with water and cook until vegetables are tender. Do not drain off water, it improves the flavor!Add milk, cheese soup, cheese, and flour mixture. Cook on medium heat until mixture comes to a boil, stirring frequently to prevent scorching. For variety, broccoli and/or cauliflower my be added or substituted for meat.
